Probably everyone has heard about the famous "Charlotte" pie, but not everyone knows that earlier this cake had a completely different look and got its name in accordance with the manufacturing process. Earlier, the classic Charlotte was a custard cake with cookies, fruits and biscuit cakes. Although there is a version that the charlotte got its name in honor of the beloved cook, as well as the English queen. But, as it happens over time, the classic English recipe has been simplified and is now firmly entrenched in many kitchens of modern housewives in the already familiar many kind of apple pie.
Charlotte, of course, many like, but, strangely enough, not everyone can cook, although the recipe is quite simple and does not take much time. Perhaps it's the diversity of recipes that many people can not choose the best option for themselves, so let us share our own recipe, which many will like.
- 3 eggs;
- 200 grams of sugar;
- 150 grams of flour;
- 50 grams of butter;
- approximately 500 grams of apples( preferably winter, as they are more firm and juicy).
In order to make the dough more airy, it is advisable to take eggs at room temperature, rather than cold ones, and the flour needs to be sieved immediately before mixing into the dough.
Prepare the dough: beat three eggs into a high bowl and whisk until the air mass forms. Then, without turning off the mixer( if you use an electric mixer, not a whisk), sprinkle about 150 grams of sugar about a tablespoon and beat for about 7 minutes until the resulting mass brightens and doubles. Then again, slowly, in small pieces, put the sifted flour into the resulting mass.
Cooking stuffing: we have two kinds of filling, but in both cases the basis will be apples. Take two or three large apples, cut them into small pieces and tamper with the dough.
Then spread the baking paper on a round baking sheet, smear it with a little butter and pour over the dough with apples. Send the baking sheet to the oven, preheated to 180 ° C for about 25-30 minutes. Do not open the oven for the first 15 minutes, as the dough is very tender and can settle.
While the cake is baked, prepare the second kind of filling. Cut the apples into slices, place them in a frying pan, sprinkle with the remaining sugar and add a little water, and then put it down for about three minutes to make the apples golden, but do not lose their shape.
When the cake is ready, remove it from the oven, immediately remove it from the baking sheet and remove the paper. Then put it on a nice dish, and on top, spread the toasted apples and pour the syrup, which will also be present. After about 15 minutes, the cake will become soaked with syrup and cool enough to be eaten with pleasure.
